Food scientists in Idaho found that pureed white beans—like Great Northern or navy beans—can replace up to 75% of the butter in cookie recipes. Replacing some of the butter in your favorite cookie recipe with beans can reduce the calories by nearly one-third, and it’s also a smart way to pack a little extra fiber and protein into sweet treats.
