It’s also a good way to use up garden produce. To make this dip, blend together in a food processor 1 can of drained, rinsed white beans, 2 cloves of garlic, and one chopped onion. Add a handful or so of fresh spinach and flavor with salt to taste and any favorite fresh herbs. Blend until smooth. Serve on toasted bread with sliced tomatoes or use as a dip for pita wedges or raw vegetables.
