Lobio, a Healthy Taste of the Caucasus

Lobio is a traditional food of the country of Georgia, in the Caucasus region of Eurasia. Made from heart healthy kidney beans and walnuts, it’s served at any meal of the day, including breakfast.  Depending on the amount of liquid you use, lobio can be made as a thick stew or a a paté to spread on bread.
