3+3 Bean Salad

Ingredients

  • 1 can (16-ounce) green beans, drained
  • 1 can (15-ounce) Dark Red Kidney beans, drained, rinsed
  • 1 can (15-ounce) Garbanzo beans, drained, rinsed
  • 1 can (15-ounce) Great Northern or Navy beans, drained, rinsed
  • 1 can (15-ounce) Pinto beans, drained, rinsed
  • 1 can (15-ounce) Black beans, drained, rinsed
  • 1/4 cup sliced green onions and tops

Ginger Dressing

  • 1/2 cup canola oil
  • 3/4 cup apricot preserves
  • 1/3 cup cider vinegar or rice wine vinegar
  • 1/4 cup sugar
  • 1 teaspoon ground ginger

Number of Servings : 16

Directions

  1. Mix ingredients for Ginger Dressing in a large bowl with a cover.
  2. Drain and rinse beans; add to Ginger Dressing and mix.
  3. Cover and refrigerate.
  4. Turn the bowl over occasionally to mix dressing and ingredients.
