  • 1 cup V8 100% Vegetable Juice
  • 1 tablespoon vegetable oil
  • ¼ teaspoon garlic powder or 2 cloves garlic minced
  • ½ teaspoon onion powder or 1 small onion
  • 1 15.5-ounce can black beans
  • 1 15.5-ounce can navy beans
  • 1 sweet red, yellow or orange pepper
  • 1 cup frozen corn
  • Optional - 1 to 2 tablespoons diced green chilies


  • In a 2-quart bowl or container, mix juice, oil and garlic.
  • Drain and rinse beans in a sieve or colander. Clean and chop pepper and onion.
  • Add beans, pepper, onion and corn to juice mixture. Stir to combine.
  • Refrigerated at least 2 hours overnight.
