Chocolate Peanut Butter Black Bean Energy Bites

These tasty treats credit in both CACFP and school nutrition.

2 bites = 1/8 cup beans and 3 bites = 1/4 cup beans

Ingredients

• ½ cup oats
• ½ cup semi-sweet chocolate chips
• 1 – 15 oz can black beans, drained and rinsed
• ¾ cup peanut butter or other nut butter
• ¼ cup honey or other sweetener choice like agave or maple syrup

Directions

1. In a food processor, add the oats and chocolate chips. Process until the chocolate is chopped finely.
2. Add the beans and process until they are well incorporated.
3. Add the peanut butter and honey and process until mixture is smooth.
4. Roll mixture into balls and place on a baking sheet lined with parchment paper. These can be eaten right away but they set up and hold better if put in the freezer for 10-20 minutes first.
5. Store in the refrigerator or freezer.

Optional: Add your favorite protein powder for extra protein
