Ingredients

  • ½ cup oats
  • ½ cup semi-sweet chocolate chips
  • 1 15-ounce can black beans drained and rinsed
  • ¾ cup peanut butter or other nut butter
  • ¼ cup honey or other sweetener of choice (such as agave or maple syrup)

Instructions

  • In a food processor, add the oats and chocolate chips. Process until the chocolate is chopped finely.
  • Add the beans and process until they are well incorporated.
  • Add the peanut butter and honey and process until mixture is smooth.
  • Roll mixture into balls and place on a baking sheet lined with parchment paper. These can be eaten right away but they set up and hold better if put in the freezer for 10-20 minutes first.
  • Store in the refrigerator or freezer.

Optional: Add your favorite protein powder for extra protein
