Ingredients

2 pounds lean hamburger
1 onion, chopped
1 green pepper, chopped
1 red pepper, chopped
salt and pepper
2 cups cooked black beans OR 1 15.5-ounce can black beans
1 12-ounce can tomato sauce
1 12-ounce can mild enchilada sauce
lowfat corn chips

Optional:
lettuce, shredded
cheese, shredded
sour cream

Number of Servings : 8

Directions

  1. In a large heavy skillet or electric frying pan, brown the hamburger.
  2. Add onion and peppers and cook until onion is clear.
  3. Add salt and pepper to taste.
  4. Add remaining ingredients and stir to combine.
  5. Simmer for 1/2 hour on low.
  6. Stir occasionally.
  7. Serve over corn chips.
  8. Top with lettuce, cheese, or sour cream.

Yield: 8 servings.
