Ingredients
- 1½ tablespoons vegetable oil
- 1 medium yellow onion diced (about 1 cup)
- 1½ teaspoons minced fresh garlic
- 1½ teaspoons ground cumin
- 1½ teaspoons dry oregano leaves
- ¼ teaspoon crushed red pepper flakes
- 1 15-ounce can Great Northern beans (You can use navy beans, cannellini beans, or other small white beans.) Do NOT drain.
- 1 pound roasted turkey meat diced
- ½ cup water
- 1 2-ounce can diced green chiles
- 4 tablespoons sour cream
- fresh cilantro leaves chopped
Instructions
- In a medium stockpot over medium heat sauté the onions in vegetable oil for 4-5 minutes. Add the garlic, cumin, oregano, and red pepper flakes, and sauté another minute or so.
- Add the beans, turkey, water, and diced chiles. Stir, cover, reduce heat to low and simmer for 20-30 minutes.
- Serve with a dollop of sour cream and some cilantro.
