  • tablespoons vegetable oil
  • 1 medium yellow onion diced (about 1 cup)
  • teaspoons minced fresh garlic
  • teaspoons ground cumin
  • teaspoons dry oregano leaves
  • ¼ teaspoon crushed red pepper flakes
  • 1 15-ounce can Great Northern beans (You can use navy beans, cannellini beans, or other small white beans.) Do NOT drain.
  • 1 pound roasted turkey meat diced
  • ½ cup water
  • 1 2-ounce can diced green chiles
  • 4 tablespoons sour cream
  • fresh cilantro leaves chopped


  • In a medium stockpot over medium heat sauté the onions in vegetable oil for 4-5 minutes. Add the garlic, cumin, oregano, and red pepper flakes, and sauté another minute or so.
  • Add the beans, turkey, water, and diced chiles. Stir, cover, reduce heat to low and simmer for 20-30 minutes.
  • Serve with a dollop of sour cream and some cilantro.
