White Bean Turkey Chili

Ingredients

  • 1 1/2 tablespoons vegetable oil
  • 1 medium (about 1 cup) yellow onion, diced
  • 1 1/2 teaspoons minced fresh garlic
  • 1 1/2  teaspoons ground cumin
  • 1 1/2 teaspoons dry oregano leaves
  • ¼ teaspoon crushed red pepper flakes
  • 1-15 oz. can Great Northern beans, navy beans, cannellini beans, or small white beans (NOTE: DO NOT drain.)
  • 1 pound roasted turkey meat, diced
  • ½ cup water
  • 1-2 oz. can diced green chiles
  • 4 tablespoons sour cream
  • Fresh cilantro leaves, chopped

Total Time: 45 minutes

Prep Time: 15 minutes
Cooking Time: 30 minutes

Directions

  1. In a medium stockpot over medium heat sauté the onions in vegetable oil for 4-5 minutes. Add the garlic, cumin, oregano, and red pepper flakes, and sauté another minute or so.
  2. Add the beans, turkey, water, and diced chiles. Stir, cover, reduce heat to low and simmer for 20-30 minutes.
  3. Serve with a dollop of sour cream and some cilantro.
