  • 4 10-inch tortillas
  • 1 15- to 16-ounce can chili beans
  • 1 cup Monterey Jack cheese shredded
  • 1 cup salsa
  • 2 cups lettuce chopped


  • Open can of chili beans, pour onto a plate, stir and mash with a fork, if desired.
  • Place tortilla on a microwavable plate.
  • Divide mashed beans into 4 quarters. Spread 1/4 of the mashed chili beans on center of a tortilla.
  • Sprinkle 1/4 cup cheese on top.
  • Microwave on low power until cheese melts.
  • Spoon 1/4 cup salsa over cheese, top with 1/2 cup lettuce.
  • Fold bottom of tortilla up about 1 inch, fold other tortilla sides over to enclose filling in a pocket. Turn burrito over.
  • Assemble and heat 3 more burritos.
  • Cut each in to 6 servings. Serve warm.
