Ingredients
- 1¼ pound ground beef
- 2 tablespoons olive oil
- 1 tablespoon butter
- ½ cup green pepper diced
- ½ cup onion diced
- 1 clove garlic minced
- 2 15-ounce can kidney beans drained
- 1 tablespoon tomato paste
- 1 10-ounce can Ro-Tel drained
- 1 15-ounce can diced tomatoes
- 2½ tablespoons chili seasoning mix
- 1 46-ounce container tomato juice
- sliced green onion

- sour cream
- crackers
Instructions
- Brown ground beef in large pot, drain excess grease. Set aside.
- Using the same pot, heat the butter and oil, add bell pepper, onions and garlic and cook until the pepper is softened, about 6 minutes. Put the ground beef back in the pot.
- Add the kidney beans, tomato paste, Ro-Tel, diced tomatoes and chili seasoning. Stir to combine.
- Slowly add in the tomato juice. Bring to a boil. Cover and reduce heat. Simmer on low heat for at least 4 hours, up to 8 hours. Serve with your favorite toppings.
