Ingredients

  • 1 package 1.25-ounce taco seasoning mix
  • 2 tablespoons canola or olive oil
  • ¼ cup water
  • ¼ cup vinegar
  • 1 14 to 16-ounce can whole kernel corn drained
  • 1 15 to 16-ounce can pinto beans drained and rinsed
  • 2 tomatoes peeled and diced
  • ¼ cup red, yellow or green pepper diced
  • 4 green onions cleaned and finely chopped

Instructions

  • Mix taco seasoning, oil, water and vinegar together in a 6 cup bowl.
  • Add vegetables and stir.
  • Cover and chill several hours or overnight.
