Ingredients
- 1 package 1.25-ounce taco seasoning mix
- 2 tablespoons canola or olive oil
- ¼ cup water
- ¼ cup vinegar
- 1 14 to 16-ounce can whole kernel corn drained
- 1 15 to 16-ounce can pinto beans drained and rinsed
- 2 tomatoes peeled and diced
- ¼ cup red, yellow or green pepper diced
- 4 green onions cleaned and finely chopped
Instructions
- Mix taco seasoning, oil, water and vinegar together in a 6 cup bowl.
- Add vegetables and stir.
- Cover and chill several hours or overnight.
