Quinoa & Black Beans

An example of the Quinoa and Black Bean recipe

Ingredients

  • 2 cups cooked quinoa
  • 2 cups cooked black beans
  • 1/2 cup chopped green onions
  • 2 medium tomatoes, diced
  • 1/2 cup chopped cilantro
  • 1 Tablespoon minced jalapeno (optional)
  • 2 teaspoons lime zest
  • 2 Tablespoons fresh lime juice
  • 2 Tablespoons olive oil
  • 1/2 teaspoon sugar
  • 1/4-1/2 teaspoon salt

Directions

  1. Combine first six ingredients in bowl.
  2. Whisk remaining ingredients in small bowl;  then add to first six ingredients.
  3. Serve at room temperature or chilled.
