Ingredients
- 2 cups cooked quinoa
- 2 cups cooked black beans
- ½ cup chopped green onions
- 2 medium tomatoes diced
- ½ cup chopped cilantro
- 1 tablespoon minced jalapeno optional
- 2 teaspoons lime zest
- 2 tablespoons fresh lime juice
- 2 tablespoons olive oil
- ½ teaspoon sugar
- ¼-½ teaspoon salt
Instructions
- Combine first six ingredients in bowl.
- Whisk remaining ingredients in small bowl; then add to first six ingredients.
- Serve at room temperature or chilled.
