Ingredients

  • 1 15-ounce can Great Northern beans drained
  • 1 red bell pepper diced
  • 1 small red onion diced
  • 3 ounces feta cheese crumbled
  • 2 garlic cloves finely grated
  • 1 tbsp balsamic vinegar
  • 1 tbsp lemon juice
  • 3 tbsp olive oil
  • 10 parsley sprigs minced
  • ¼ tsp habanero sauce optional

Instructions

  • In a large glass or metal bowl, combine the grated garlic, lemon juice, and balsamic vinegar. Slowly drizzle in the olive oil while whisking to create a vinaigrette.
  • Add the diced red bell pepper and red onion to the vinaigrette and stir to coat.
  • Gently fold in the drained beans, ensuring they are well coated.
  • Add the crumbled feta on top, but do not stir it in.
  • Cover and refrigerate for 30 minutes to allow flavors to meld.
  • Before serving, sprinkle the minced parsley and add habanero sauce to taste, if desired. Toss gently. Serve and enjoy!
