- 1 15-ounce can Great Northern beans drained
- 1 red bell pepper diced
- 1 small red onion diced
- 3 ounces feta cheese crumbled
- 2 garlic cloves finely grated
- 1 tbsp balsamic vinegar
- 1 tbsp lemon juice
- 3 tbsp olive oil
- 10 parsley sprigs minced
- ¼ tsp habanero sauce optional
Instructions
- In a large glass or metal bowl, combine the grated garlic, lemon juice, and balsamic vinegar. Slowly drizzle in the olive oil while whisking to create a vinaigrette.
- Add the diced red bell pepper and red onion to the vinaigrette and stir to coat.
- Gently fold in the drained beans, ensuring they are well coated.
- Add the crumbled feta on top, but do not stir it in.
- Cover and refrigerate for 30 minutes to allow flavors to meld.
- Before serving, sprinkle the minced parsley and add habanero sauce to taste, if desired. Toss gently. Serve and enjoy!
