For example, the resistant starch in beans escapes digestion in the small intestine. It travels intact to the large intestine where bacteria metabolize it to produce short-chain fatty acids. These compounds are thought to protect colon cells against cancer.

Beans, especially those with deep colors like red and black beans, are also rich in an extensive variety of cancer-fighting antioxidants.
